Fried Rice Noodles ala Singapore Noodles

Singaporeans never actually refer to this dish as Singapore Noodles so I was rather surprised when I discovered it as such in Aus. Nonetheless this is a versatile dish as you can add whatever you like to it or stick by the vego version. Regardless, it still rocks.

Ingredients:
1 tbsp chilli powder
Dried shrimps
2 red chillies
1 clove garlic
2 shallots (1 finely chopped and 1 for the paste)
chicken/beef strips
fishballs/fish tofu/tofu (substitute with prawns/calamari)
tomatoes
chinese leafy vege eg choy sum/bak choy
chinese cabbage
kicap manis
tomato sauce
Thin rice noodles

Boil water and add rice noodles
Add boiling water to dried shrimps. Remove water when soft
Pound chillies, shallot & garlic in M&P
Add chilli powder and mix to form a paste
Saute shallot in wok & add the chilli paste
Add ABC & tomato sauce
Add noodles
Mix to consistency
Add meat & fishballs
Add vege and tomatoes

Serve with parsley
